Healthy treats for the lunch box
These are mostly raw, packed with protein and so good! I made a batch yesterday, wrapped each one in saran wrap, and put them in the freezer, so that I'll have a quick treat to put in Zach's lunches.
Recipe:
2 cups of almonds (I buy the sliced ones and food process them first)
1/4 cup ground chia seeds or pumpkin seeds
1/2 cup dried prunes
1/2 cup almond butter (peanut butter would be fine)
1/2 cup shredded coconut (unsweetened)
1/2 tsp sea salt
1/2 cup coconut oil
I Tbsp. honey
2-3 teaspoons vanilla extract
part of a chocolate bar or a handful of chocolate chips, melted (optional)
Mix first 5 ingredients in a food processor. Mine is a small food processor, so I mix a couple of batches and then blend it all together with my fingers.
Next, melt coconut oil on low heat. Then stir in vanilla and honey. Mix this into the mixture above, either with a spoon, your hands, or a food processor.
Then press it into an 8X8 pyrex and chill for an hour. After it is chilled, then melt a little chocolate and drizzle it on top and return to the refrigerator for 30 more minutes. Makes 12 bars. Store in the refrigerator or freezer for later enjoyment!
